The Billy Goat Tavern is the Home of the "CheezBorger" made famous in John Belushi's SNL skit.

There is more than one Billy Goat Tavern in Chicago so make sure you head to the original one on Lower Michigan Ave. Stepping down into this cavernous space is truly a pleasure. Its one of those classic places that rarely changes a piece of decoration. The "CheezBorger CheezBorger" thing is basically a performance piece for tourists but hey, its still entertaining. "No Pepsi, Coke" "No Fries, Chips."

I thought going into the place that the Burger itself must be weak but I was pleasantly surprised by its simple charms especially the tasty patties. You get a double cheese because the patty's are paper thin and thats just what they give you unless you specify a single or tripple. One slice of american cheese is served in between the two patty's all sitting on a plain roll toasted on the griddle. Forget about getting it medium rare because the patty is just too thin but mine came out with little bits of pink in the middle. The meat itself seemed very fresh and was seasoned perfectly with salt and pepper. The texture benefits from a well aged but clean griddle that you can watch them flip the pattys over on in theatrical fashion. The burger is served plain on the roll and there is a fixing bar with pickles, onions, ketchup, and mustard if you like. If you want beer you need to order it from the bar across the restaurant. I was happily surprised with harmony experienced in this simplistic burger. The pickles were great, the onion is mild and crunchy, and the crunch roll fits perfectly with the accompaning ingredients. This is a Great Burger Experience.
